Serrano Ham & Mushroom Omelette

Today we celebrate Father’s day a day early. What better way to start the celebration by making breakfast a little bit more special by making an omelette rather than the usual bacon and eggs (yes we do bacon and eggs every year on Father’s day). With the help of my son (like 10% help), we prepared this serrano ham and mushroom breakfast for his papa.A small bag of gift and a homemade card from my son waited on the table as well.

Omelette is one of those recipes that you can never go wrong. The ingredients you can use is unlimited.

For this recipe, saute onions and mushrooms in olive oil with a pinch of salt, ground pepper and ground oregano.Saute until the edges of the onions and mushrooms turn brown, about 5-10 minutes.

Transfer the sauteed mushroom and onion mixture on a plate.

In the same pan add two tablespoons of oil.Add half of the egg mixture and fry for a minute on medium heat.

Turn the heat to low. Flip the egg just like so.

Fill one side of the egg with the mushroom and onion mixture.Top with chopped fresh chives. Tear the serrano ham into small pieces and sprinkle on top.

Add mozzarrella cheese.

Carefully insert your spatula underneath the egg and flip the other side to fold.

Cook for a minute or so to melt cheese.
Transfer on a platter. Sprinkle with more chopped chives and serve to the best papa ever!!!

  1. 4 large eggs, beaten with a pinch of salt
  2. 1 tablespoon chopped fresh chives
  3. 2-3 slices of serrano ham (substitute with any ham or prosciutto)
  4. 1 cup of chopped fresh or canned mushroom
  5. grated mozzarella cheese
  6. a pinch of salt
  7. 1/8 tsp ground pepper
  8. 1/8 tsp ground dried oregano
  9. 4-6 tablespoons of olive oil
